Custom Processing Reservation


Nettles Sausage provides custom processing for domestic hogs. We do not accept boars due to the testosterone. If you have the boar cut, and it’s been over a month, we will accept the barrow. We don’t provide custom processing during fair season (end of January to the end of April). We have at least 1 kill a month from May to December. However, depending on reservations we typically have 2 kills each month. There is no cost to make a reservation, or to cancel a reservation. We recommend making a reservation for the most amount of hogs you plan on bringing because we can always reduce the amount. However, we can’t always add due to space. Nettles Sausage requires a cut sheet from the individual having their hog processed. You can fill out our form online or provide a physical cut sheet that is completely filled out.

Drop Off Process & Location


We are located at 190 SW County Rd 240, Lake City, FL 32025. If you’re heading west on CR 240, the plant will be on your left; if you’re heading east, the plant will be on your right. When you arrive at the plant there is a road to the right of the plant. You will drive down there and back your trailer into the hog pen shoot. There will be an employee in the downstairs office to assist or at the pens unloading hogs. Once you’ve backed your trailer up, we will assist loading your hog(s) into their pen. Drop off is the day prior to the kill, between 7AM-4PM.

USDA


Nettles Sausage offers USDA slaughter, but not USDA processing. The processing falls under custom and is not for resale. The product will be cut & wrapped with freezer paper, and we do not offer vacuum sealing. However, you may have the hog slaughtered under USDA and receive primal cuts. We offer slaughter, clean & split, or slaughter, clean & quartered. The pricing for USDA is $0.75/LB on the hog’s live weight. Once you’ve received the primal cuts, you may take them to a certified kitchen to cut and vacuum seal your product. That product may be sold at a farmer’s market, food truck, restaurants, etc.
